VBITG: Lentil Soup

Vegan but it tastes good! This is a simple and quick lentil soup to make that is just as filling as it is delicious. Omnivore approved!

Cook time: ~1 hour
Difficulty: Easy
Ingredients: Red Lentils (1 cup), Yellow Onion (1/2), Lemon (1/2), Olive Oil (1/4 cup), Cumin (1 Tbps), Tumeric (1 Tsp), and Veggie Broth (4 cups).
Optional Ingredients: Fresh parsley (garnish) and pita bread.
Servings: 2 filling servings!

  1. Dice onion
  2. Pour 1/4 cup olive oil into pot.
  3. Sautee diced onions until lightly golden brown.
  4. Place Red Lentils into pot. Sautee them for 5-10 minutes.
  5. Mix in Cumin (1 Tbps) and Tumeric (1 Tsp).
  6. Pour 4 cups of Veggie Broth into pot
  7. Set kitchen timer to 50 minutes and place lid on top of pot
  8. Keep lid on top but lightly mix and check on pot every 5 minutes or so.
Lightly golden brown diced onions. Successfully sauteed!
Added in red lentils to saut̩e for another 5 Р10 mins (to enhance flavor)!

These are all the ingredients you should have handy at this point!
I realized I liked bullion best for soup. You get a better idea of the flavor quality beforehand.
This is the the start of the soup now. Nothing special…
We’ve added in the spices. We have a colorful boiling lovely mess!
We’re getting ready to simmer down. The soup has been cooking for at least 30-40 minutes.
This is the desired consistency. Chunky but still a bit creamy and smooth.
***Cook any more than this and you will lose that desired consistency and burn your pot!
This is a kind of pita bread bread you can serve and eat this with. Highly recommended!

  1. At some point I want to make my own pita bread but let me deal with my laziness 1st. Thanks for the lentil soup idea. It reminds me of my split pea soup. I may mix peas & lentils into a soup now. I like the idea of tumeric as a soup seasoning.
